It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the 'Zone Tripica'. The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks... just sweet, fresh milk in its pristine state... then the artisan's ancient skills... and then nature's own good time (aged from 18 to 36 months). What you see today is just what the knights, serfs, saints and kings of old ate! And please, don't compare it to the pre-grated 'Parmesan' cheese found in the green can in aisle 4 of the grocery store. Made from raw cow's milk, aged over 18 months.

This is so delicioso that I can eat the entire pound by myself. Just one hint though, if you love to cook (let's say...Lasanga), sprinkle a little Parmigiano Reggiano over the top...try it. If you're on a diet, this is one heck of a way to break it.

Parmigiano Reggiano, mostly grated for use by most of us here in the U.S., is considered very wrong in Italy to use as a "grating" cheese. It's used as shavings for toppings to dishes or just for eating chunks. NEVER grated. The best by far is Parmigiano Reggiano Resirva Stravecchio. YUM-O!

But I'm here in the U.S., so I do it both ways. Great to eat (wonderful, nutty flavor to me). I use it on pastas, salads, bruschettas. Top off some Artisan toasted bread with pesto and grate this cheese over it, or put a nice shaving on it and set it under the broiler...OMG! It'll make you sass your mama!

Excellent product and delivered fresh. Made of raw milk to keep original flavor. Highly recommended if you like strong taste of raw milk cheeses.

This cheese is very good, but for picnicking, I'd recommend the one pound version of this product. The larger size is unwieldy and overly-filling unless you are picnicking with a friend.
